Turkey and Broccoli Bake with Coconut Milk

April 9, 2024

A delicious and creamy turkey and broccoli bake made with coconut milk.

If you’re in the mood for a comforting yet healthy dinner, this turkey and broccoli bake with coconut milk is the perfect solution. Packed with lean turkey, vibrant broccoli, and a creamy coconut milk sauce, it’s a dish that’s satisfying, flavorful, and surprisingly easy to make.

The base of this recipe is lean ground turkey, which is sautéed with garlic, onions, and a few spices for added flavor. Turkey is an excellent source of protein and is a perfect choice for a lighter, healthier meal. Once browned, the turkey is mixed with blanched broccoli, which adds color, texture, and a nutritional boost. Broccoli is high in fiber and packed with vitamins, making this bake a wholesome choice for a family meal.

The magic happens when you combine the turkey and broccoli with coconut milk. The coconut milk adds a rich, creamy texture without the need for heavy cream, making the dish both dairy-free and deliciously velvety. A little chicken broth, along with seasonings like salt, pepper, and thyme, helps to elevate the flavors. You can even add a pinch of red pepper flakes for a subtle kick if you like things spicy.

To bring it all together, pour the turkey, broccoli, and coconut milk mixture into a baking dish, top it with some shredded cheese (optional for a richer taste), and bake until the top is golden and bubbly. The result is a perfectly balanced, comforting casserole that’s ideal for a cozy dinner.

This turkey and broccoli bake is versatile too, you can swap in other veggies like cauliflower or spinach, or add extra spices like curry powder for a flavor twist. It’s also a great make-ahead meal that stores well in the fridge for a few days or freezes for future dinners.

Rich, creamy, and full of flavor, this turkey and broccoli bake with coconut milk is the kind of dish that turns simple ingredients into something truly satisfying.
