Ingredients
  

  • 3 tablespoons chia seeds
  • 1 cup almond milk or any milk of choice
  • 1 tablespoon maple syrup or sweetener of choice
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee powder dissolved in a bit of warm water
  • 2 tablespoons mascarpone cheese or Greek yogurt
  • 1 tablespoon cocoa powder for dusting

Instructions
 

  • In a bowl, combine chia seeds, almond milk, maple syrup, vanilla extract, and dissolved coffee. Stir well.
  • Let the mixture sit for about 5-10 minutes, then stir again to prevent clumping. Cover and refrigerate overnight, or at least 2-3 hours until the chia seeds expand and create a pudding-like consistency.
  • Before serving, fold in the mascarpone cheese or Greek yogurt until smooth.
  • Divide the chia pudding between serving cups and dust with cocoa powder. Enjoy your Tiramisu Chia Pudding!
