Tempura (Japanese Fried Batter)

June 25, 2024

Tempura is one of the most iconic and beloved dishes in Japanese cuisine. It stands out for its delicate, airy batter and crisp texture. Whether you’re enjoying shrimp, sweet potato, green beans, or even a shiso leaf, tempura turns simple ingredients into a light and flavorful treat. It’s a dish that feels both refined and comforting.

The key to perfect tempura lies in the batter. Made with just flour, egg, and ice-cold water, the batter is mixed gently to avoid activating too much gluten. It should remain slightly lumpy, and very cold, which helps create the signature texture. The ingredients are dipped quickly and fried in hot oil until they puff up and turn golden. The result is a coating that is crisp and light, never heavy or greasy.

A traditional tempura dish is served with a dipping sauce called tentsuyu, made from soy sauce, dashi, and mirin. This sauce is savory and slightly sweet, pairing beautifully with the subtle flavors of the tempura. A small portion of grated daikon radish is often added for a bit of texture and brightness. For a simpler presentation, a pinch of sea salt or a squeeze of lemon works just as well.

Tempura is often made using seasonal ingredients. In spring, you might see asparagus or fiddlehead ferns. In summer, zucchini or eggplant is popular. During the cooler months, heartier vegetables like mushrooms or pumpkin make an appearance. Seafood, especially shrimp and white fish, is also commonly used and always a favorite.

Whether served as part of a larger meal, over a bowl of rice, or alongside soba noodles, tempura offers a delicious contrast of textures and a clean, satisfying flavor. It’s a wonderful example of how Japanese cuisine elevates simple ingredients through technique and attention to detail.

I tried this but it didn’t turn out right. My oil wasn’t hot enough, I think.

It happens! Maybe try heating the oil a bit more next time. You want it sizzling when you put the food in!

    2. 5 stars
I had the same problem! The oil needs to be super hot to get that crispiness. Don’t give up!

Okay, but what about the shrimp? Do you just toss ’em in like the veggies? 🤔

Honestly, I thought this would taste better. It just didn’t have enough flavor for me. Maybe I should have added more salt? 🤔

3 stars? I think it’s perfect as is! Veggies ruin the crunch. Just try it how it is!

I totally get that! Adding more veggies would make it even better. But the classic tempura is just amazing on its own too!

I don’t know man, it seems like too much work for just frying veggies. I might as well bake them.

  16. 4 stars
Yum! 😋 So crunchy and tasty! Just be careful with the oil; it can splatter.

  18. 3 stars
I had a hard time getting the batter right, it kept getting too thick. Any tips?

Maybe try adding a little more cold water to loosen it up? It might help with the thickness!

Why use an egg? Can’t we just mix flour and water? Sounds silly.

    1. User avatar Easton West says:

      5 stars
Using an egg helps to make the batter light and crispy! Don’t skip it if you want the real tempura experience. 🍤
