A refreshing and flavorful salad with a zesty salsa dressing.
1 pound ground beef | |
1 packet taco seasoning | |
1 cup salsa | |
1 head romaine lettuce, chopped | |
1 cup cherry tomatoes, halved | |
1 cup black beans, rinsed | |
1 cup shredded cheddar cheese | |
1/2 cup sliced black olives | |
1/2 cup diced red onion | |
1/4 cup chopped fresh cilantro | |
Tortilla chips, for serving |
1. | In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. |
2. | Add the taco seasoning and salsa to the skillet and stir well to combine. Simmer for 5 minutes. |
3. | In a large bowl, combine the lettuce, cherry tomatoes, black beans, cheddar cheese, black olives, red onion, and cilantro. |
4. | Add the cooked ground beef mixture to the bowl and toss well to combine. |
5. | Serve the salad with tortilla chips on the side. |
