Ingredients
- 4 cups sweet potatoes mashed
- 1/2 cup granulated sugar
- 2 eggs beaten
- 1/2 cup milk
- 1/4 cup butter melted
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 cup brown sugar packed
- 1/2 cup all-purpose flour
- 1/4 cup butter melted
- 1 cup mini marshmallows
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together mashed sweet potatoes, granulated sugar, eggs, milk, 1/4 cup melted butter, vanilla extract, and salt. Spread evenly in a 9x13 inch baking dish.
- In a separate bowl, mix together brown sugar, flour, and 1/4 cup melted butter until crumbly. Stir in mini marshmallows. Sprinkle mixture over sweet potato mixture.
- Bake for 30 to 40 minutes, or until topping is golden brown.
I only had 3 cups of sweet potatoes and used less sugar. It turned out fine, but maybe a bit undercooked. Next time, I’ll follow the recipe better.
