These refreshing spring rolls are filled with juicy mango, fresh mint, and crunchy vegetables. Perfect for a light snack or appetizer.
Ingredients
- 4 sheets rice paper
- 1 mango peeled and sliced into thin strips
- 1/2 cup fresh mint leaves loosely packed
- 1 cucumber cut into matchsticks
- 1 carrot peeled and julienned
- 1/2 cup vermicelli noodles cooked and drained
Instructions
- Prepare all the filling ingredients and have them ready at your station.
- Soak rice paper sheets in warm water until pliable, then lay them on a damp towel.
- Place mango slices, mint leaves, cucumber, carrot, and vermicelli noodles on the lower third of the rice paper.
- Fold the bottom of the rice paper over the filling, then fold in the sides and roll tightly. Repeat with remaining ingredients.
- Serve immediately with your favorite dipping sauce.
