Delicious and healthy spinach pancakes perfect for a nutritious breakfast or snack.
Ingredients
- 1 cup fresh spinach washed and dried
- 1 cup all-purpose flour
- 1 cup milk any kind
- 1 large egg beaten
- 1 teaspoon baking powder
- 0.5 teaspoon salt
- 1 tablespoon olive oil for cooking
Instructions
- In a blender, combine spinach, milk, and egg. Blend until smooth.
- In a mixing bowl, combine flour, baking powder, and salt.
- Pour the spinach mixture into the dry ingredients and stir until just combined.
- Heat olive oil in a non-stick skillet over medium heat.
- Pour 1/4 cup of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
- Flip and cook for another 1-2 minutes until golden brown.
- Repeat with remaining batter. Serve warm.
