A delicious and healthy breakfast option made with spinach and eggs.
4 slices of whole wheat bread | |
4 large eggs | |
2 cups of fresh spinach | |
1/2 cup of shredded cheese (optional) | |
Salt and pepper to taste | |
Butter or oil for cooking |
1. | Heat a non-stick skillet over medium heat. |
2. | Add the spinach and cook until wilted, about 2 minutes. |
3. | Remove the spinach from the skillet and set aside. |
4. | In the same skillet, melt a pat of butter or heat some oil. |
5. | Crack the eggs into the skillet and scramble them. |
6. | Add the cooked spinach and shredded cheese (if using) to the eggs and mix well. |
7. | Season with salt and pepper to taste. |
8. | Toast the slices of bread. |
9. | Spread butter or your favorite spread on the toasted bread slices. |
10. | Divide the egg and spinach mixture evenly among the slices of toast. |
11. | Serve hot and enjoy! |
