Ingredients
- 100 grams pasta any type of your choice, such as spaghetti or penne
- 50 grams sun-dried tomatoes drained and chopped
- 100 grams fresh spinach washed and roughly chopped
- 2 tablespoons olive oil
- 2 cloves garlic minced
- to taste salt
- to taste black pepper freshly ground
- optional parmesan cheese grated, for serving
Instructions
- Cook the pasta in a large pot of boiling salted water according to the package instructions until al dente. Drain and set aside.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped sun-dried tomatoes to the pan and cook for an additional 2-3 minutes.
- Add the chopped spinach to the pan, stirring continuously until wilted, about 2-3 minutes.
- Add the cooked pasta to the pan and toss to combine all ingredients. Season with salt and pepper to taste.
- Serve immediately, garnished with grated parmesan cheese if desired.
