Spicy Black Bean and Mango Burritos
Delicious and flavorful vegan burritos filled with spicy black beans and sweet mangoes.
Ingredients
- 1 cup black beans
- 1 mango diced
- 1 red bell pepper diced
- 1/4 cup red onion diced
- 1/4 cup cilantro chopped, fresh
- 2 cloves garlic minced
- 1 tsp cumin powder
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 whole wheat tortillas large,
Instructions
- 1. Heat a large skillet over medium heat. Add the black beans, mango, red bell pepper, red onion, cilantro, garlic, cumin powder, chili powder, smoked paprika, salt, and black pepper. Cook for 5-7 minutes, until the vegetables are tender and the flavors have melded together.
- 2. Warm the tortillas in a separate skillet or oven.
- 3. Divide the black bean and mango mixture evenly among the tortillas. Roll up the tortillas, tucking in the sides, to form burritos.
- 4. Serve hot and enjoy!
