Ingredients
- 1 pound beef sirloin cut into bite-sized pieces
- 1 onion sliced
- 1 red bell pepper sliced
- 1 zucchini sliced
- 1 tbsp olive oil
- 2 tbsp souvlaki seasoning
- Salt and pepper to taste
- 4 eggs
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add beef sirloin and cook until browned, about 6-8 minutes.
- Remove beef from skillet and set aside.
- In the same skillet, add onion, bell pepper, and zucchini.
- Cook until vegetables are tender, about 5-6 minutes.
- Add souvlaki seasoning, salt, and pepper to the skillet and stir to coat the vegetables.
- Return the beef to the skillet and mix well with the vegetables.
- Create four wells in the mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are cooked to your liking, about 4-5 minutes for medium runny yolks.
