A delicious and healthy salad packed with Southwest flavors!
1 can (15 ounces) black beans, rinsed and drained | |
1 cup corn kernels, fresh or frozen | |
1 red bell pepper, chopped | |
1/2 red onion, chopped | |
1/2 cup cherry tomatoes, halved | |
1/4 cup chopped fresh cilantro | |
2 tablespoons lime juice | |
1 tablespoon olive oil | |
1 teaspoon ground cumin | |
1 teaspoon chili powder | |
Salt and pepper, to taste |
1. | In a large bowl, combine the black beans, corn, bell pepper, red onion, cherry tomatoes, and cilantro. |
2. | In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper. |
3. | Pour the dressing over the salad and toss to combine. |
4. | Serve immediately or refrigerate until ready to serve. |
