Southwest Black Bean Salad

Ingredients

1 can (15 ounces) black beans, rinsed and drained
1 cup corn kernels, fresh or frozen
1 red bell pepper, chopped
1/2 red onion, chopped
1/2 cup cherry tomatoes, halved
1/4 cup chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste

Instructions

1.In a large bowl, combine the black beans, corn, bell pepper, red onion, cherry tomatoes, and cilantro.
2.In a small bowl, whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper.
3.Pour the dressing over the salad and toss to combine.
4.Serve immediately or refrigerate until ready to serve.
