4 chicken breasts | |
2 lemons | |
4 large potatoes | |
4 cloves of garlic | |
2 tablespoons of olive oil | |
1 teaspoon of dried thyme | |
1 teaspoon of dried rosemary | |
Salt and pepper to taste |
1. | Preheat the oven to 400°F (200°C). |
2. | Season the chicken breasts with salt, pepper, dried thyme, and dried rosemary. |
3. | Heat olive oil in a skillet over medium heat. Place the chicken breasts in the skillet and cook for about 3 minutes on each side, until browned. |
4. | Remove the chicken breasts from the skillet and set aside. |
5. | Slice the lemons and potatoes into thin rounds. Crush the garlic cloves. |
6. | Arrange the lemon slices in a single layer in the bottom of the skillet. Top with a layer of potato slices and crushed garlic. |
7. | Place the chicken breasts on top of the potatoes. |
8. | Cover the skillet with foil and transfer to the preheated oven. Bake for 35-40 minutes, until the chicken is cooked through and the potatoes are tender. |
9. | Remove the foil and broil for an additional 2-3 minutes, until the chicken and potatoes are golden brown. |
