Ingredients
  

  • 200 g shrimp peeled and deveined
  • 250 g pasta your choice, cooked
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup mayonnaise
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp olive oil
  • 1 tsp dill fresh, chopped
  • to taste salt
  • to taste black pepper

Instructions
 

  • Boil pasta according to package instructions, then drain and rinse under cold water to stop the cooking process.
  • Heat olive oil in a skillet over medium heat. Add shrimp and cook for 3-4 minutes until pink and opaque. Remove from skillet and set aside to cool.
  • In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
  • In a separate small bowl, whisk together mayonnaise, lemon juice, and dill. Add salt and black pepper to taste.
  • Pour dressing over the pasta and shrimp mixture, tossing gently to combine. Adjust seasoning if necessary.
  • Refrigerate for 30 minutes before serving to allow flavors to meld. Serve chilled.
