Shrimp Pasta Salad
A refreshing and delicious Shrimp Pasta Salad perfect for a light lunch or summer dinner.
Ingredients
- 200 g shrimp peeled and deveined
- 250 g pasta your choice, cooked
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1/4 cup red onion finely chopped
- 1/4 cup mayonnaise
- 2 tbsp lemon juice freshly squeezed
- 1 tbsp olive oil
- 1 tsp dill fresh, chopped
- to taste salt
- to taste black pepper
Instructions
- Boil pasta according to package instructions, then drain and rinse under cold water to stop the cooking process.
- Heat olive oil in a skillet over medium heat. Add shrimp and cook for 3-4 minutes until pink and opaque. Remove from skillet and set aside to cool.
- In a large bowl, combine cooked pasta, shrimp, cherry tomatoes, cucumber, and red onion.
- In a separate small bowl, whisk together mayonnaise, lemon juice, and dill. Add salt and black pepper to taste.
- Pour dressing over the pasta and shrimp mixture, tossing gently to combine. Adjust seasoning if necessary.
- Refrigerate for 30 minutes before serving to allow flavors to meld. Serve chilled.
