Ingredients
  

  • 8 ounces sashimi-grade fish thinly sliced, such as tuna or salmon
  • 8 ounces soba noodles
  • 2 cups mixed salad greens
  • 1 cucumber thinly sliced
  • 1 carrot julienned
  • 1/4 cup Green onions chopped
  • 1/4 cup cilantro chopped
  • 1/4 cup mint chopped
  • 1/4 cup basil chopped
  • 2 tbsp rice vinegar
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp ginger grated
  • 1 tsp garlic minced
  • 1/4 cup peanuts optional, chopped
  • Lime wedges for serving

Instructions
 

  • Cook the soba noodles according to package instructions. Drain and rinse with cold water.
  • In a large bowl, combine the cooked soba noodles, salad greens, cucumber, carrot, green onions, cilantro, mint, and basil.
  • In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, lime juice, grated ginger, and minced garlic.
  • Pour the dressing over the noodle and salad mixture and toss to coat.
  • Divide the salad among serving plates and top with the sliced sashimi.
  • Garnish with chopped peanuts, if desired, and serve with lime wedges.

    The ingredients seem way too fancy for a simple salad. I dont have half these herbs. Just regular greens should work.

      Fancy ingredients? I dont know. Just mix whatever you have, it’ll still taste good! Just make sure that fish is fresh, or else 🤢.

      I totally get what you mean! Not everyone has a full herb garden at home. I think just using regular greens would be fine. Maybe add a bit of lemon for some zing?

      I dunno, croutons in a salad with fish? Sounds kinda weird to me. But hey, if you like it, go for it!

      Sashimi is meant to be raw! It’s actually super healthy and safe if you get good quality fish. You should definitely try it before saying eew!
