Salmon and Avocado Sushi Roll Salad
A delicious and healthy salad inspired by sushi rolls. Made with fresh salmon, creamy avocado, and crunchy vegetables.
Ingredients
- 1 cup sushi rice
- 2 tbsp rice vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 200 g salmon thinly sliced, fresh
- 1 avocado ripe, sliced
- 1/2 cucumber julienned
- 1 carrot julienned
- 2 Green onions sliced
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp lime juice
- 1 tbsp sesame seeds
Instructions
- Cook sushi rice according to package instructions. Let cool.
- In a small bowl, combine rice vinegar, sugar, and salt. Stir until sugar and salt are dissolved.
- Drizzle vinegar mixture over cooled sushi rice. Gently toss to combine.
- In a large bowl, combine salmon, avocado, cucumber, carrot, and green onions.
- In a separate small bowl, whisk together soy sauce, sesame oil, and lime juice.
- Drizzle dressing over salmon mixture. Toss to combine.
- To serve, divide sushi rice mixture among plates. Top with salmon mixture and sprinkle with sesame seeds.
