Ingredients
- 8 medium carrots peeled and cut into sticks
- 2 tablespoons olive oil for roasting
- 1 teaspoon salt to taste
- 1/2 teaspoon black pepper freshly ground
- 1 cup chimichurri sauce see below for ingredients
- 8 small tortillas corn or flour
Instructions
- Preheat the oven to 400°F (200°C).
- Place the carrots on a baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to evenly coat.
- Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through.
