Delicious and colorful cheesecake bars perfect for special occasions or summer gatherings.
Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter melted
- 16 oz cream cheese softened
- 1/2 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup blueberries fresh
- 1 cup strawberries sliced, fresh
Instructions
- Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.
- In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared baking dish.
- In a separate bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then stir in vanilla extract.
- Pour cream cheese mixture over the crust and spread evenly. Top with fresh blueberries and sliced strawberries.
- Bake in the preheated oven for 45 minutes or until the center is almost set.
- Allow to cool, then refrigerate for at least 1 hour before cutting into bars. Enjoy!
