Red, white, and blueberry cheesecake bars are the perfect dessert for summer celebrations, especially the Fourth of July, Memorial Day, or any festive gathering. These colorful bars combine a buttery graham cracker crust, a creamy cheesecake filling, and a vibrant topping of fresh strawberries and blueberries. They are sweet, tangy, and absolutely irresistible.
The base of these bars starts with a classic graham cracker crust. Crushed graham crackers are mixed with melted butter and a touch of sugar, then pressed into the bottom of a baking pan to create a crunchy, buttery foundation. This layer adds the perfect contrast to the smooth and rich cheesecake filling that comes next.
The cheesecake layer is made from cream cheese, sugar, eggs, and a splash of vanilla extract. It is velvety, luscious, and lightly sweetened, offering just the right amount of tang to balance the sweetness of the fruit. Once the cheesecake is baked and cooled, it becomes the perfect canvas for the patriotic topping.
Fresh strawberries and blueberries are arranged on top to create that iconic red, white, and blue look. The strawberries bring a juicy sweetness while the blueberries add a pop of tartness. You can lay them out in stripes, create a flag design, or scatter them casually for a rustic, festive appearance.
Not only are these cheesecake bars visually stunning, but they are also easy to slice and serve, making them ideal for backyard barbecues, picnics, or potlucks. They hold up well in warm weather if kept chilled and are always a crowd favorite wherever they go.
Red, white, and blueberry cheesecake bars pair wonderfully with a glass of sparkling wine, lemonade, or a chilled rosé. The bright flavors and creamy texture make them the perfect ending to any summer meal.
Whether you are hosting a party or simply want to make something special, these cheesecake bars deliver on flavor, texture, and presentation. They are festive, refreshing, and guaranteed to be a hit with family and friends.

These bars are AMAZING! I made them for a picnic and everyone loved them!
So glad to hear that! These bars are always a hit at gatherings.
OMG. So good! I could eat the whole pan myself!
Cheesecake is usually good, but this one is just okay. Not my favorite.
Is this a dessert or breakfast? I could eat it any time! Yum!
I dunno, my cheesecake mix was more like soup. Did I do something wrong?
Maybe you didn’t mix it enough? Sometimes the cream cheese needs to be really smooth before adding the eggs. Don’t worry, it happens to the best of us!
Soup? That’s strange, mine came out solid. Did you measure the ingredients right? Especially the eggs and cream cheese?
So simple and delicious! The combination of berries is perfect.
Can you make these bars with other fruits? I wanna try with mangoes next time!
Easy and tasty! But I used a bigger pan and it got burnt, so caveat emptor!
No thanks. Didn’t like it, tasted weird. But I guess others enjoyed it?
These bars are a hit at my family BBQs! So easy to make, and everyone loves the colors!
Yummm! Best cheesecake ever, even though I forgot to add sugar!
Wait, how can it be the best cheesecake if you forgot the sugar? That makes no sense!
That’s impressive! Even without sugar, it sounds delicious! 😊
Delicious! I used frozen blueberries and they turned out just fine. Will make again!
I’m glad to hear they turned out well for you! Frozen blueberries are such a great hack. ❤️
ewwwww, I dont like blueberry lol. Can you make it with just strawberry?
Why is everyone acting like this is some revolutionary recipe? It’s just cheesecake with fruit.
I followed the recipe, but it tasted kinda bland. Maybe add more vanilla?
I think that’s a good idea! Sometimes a little extra vanilla can really bring out the flavors. Did you use pure vanilla extract or imitation? Pure is the way to go.
I think the crust needs more butter. It was too dry for my taste!
But butter is what makes it good! You can’t just take it out! Maybe you did something wrong?
I thought the crust was just right! Maybe try adding some cream or a splash of milk instead of more butter?
Pretty decent recipe! Maybe I’ll add more strawberries next time for extra flavor.
These cheesecake bars are a hit at every BBQ! They’re so delicious and easy to make.
Not impressed. The crust was too crumbly and the filling was kinda bland. I wouldn’t make again.
I dunno, is this healthy? Cheese and sugar? Seems like a heart attack waiting to happen lol.
Looks yum! I bet my kids would love this. Gonna try it next weekend!
OMG these are so good! I made them for the BBQ and everyone loved it. Will def make again!
I tried this recipe but added a little lemon juice. It turned out awesome! Thanks for sharing.
This looks great, but I’m not sure about using fresh berries. Can frozen work too?
Yum! Perfect for the 4th of July! Red, white, and blueberry all the way! 🇺🇸
Absolutely! This will be the star of my BBQ! Can’t wait to make it! 🎉
Looks good and all, but how do you know the crust won’t crumble? 🤔
These cheesecake bars are to die for! 😍 I made them for a picnic, and everyone loved them. Going to make them again next weekend!
I dunno… I followed the recipe but mine turned out a bit too runny. Maybe I did something wrong?
I tried this but my cheesecake didn’t set. I followed the recipe exactly. What did I do wrong?
YUM! Made these for the 4th of July and everyone loved em. Def gonna make again!
Cheesecake is a dessert, but I thought this had too many fruits. Maybe less berries would taste better.
Less berries? I dunno, sounds kinda boring to me. I love the berry explosion! But I guess everyone has their taste. 🤷♂️
I totally disagree! The more fruit, the better! It adds freshness and flavor to the cheesecake! 🍓🍇
Good, but a little too sweet for my taste. Would reduce the sugar next time. 🍰
Best dessert ever!!! The combination of strawberries and blueberries is just perfect!
Totally agree! Those berries really make it so refreshing! 🍓🫐
Not bad, but I was expecting more flavor. Where’s the lemon juice? Felt kinda plain.
