Delicious and colorful cheesecake bars perfect for special occasions or summer gatherings.
1 cup graham cracker crumbs | |
1/4 cup sugar | |
1/2 cup butter, melted | |
16 oz cream cheese, softened | |
1/2 cup sugar | |
2 eggs | |
1 tsp vanilla extract | |
1 cup fresh blueberries | |
1 cup fresh strawberries, sliced |
1. | Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper. |
2. | In a bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into the bottom of the prepared baking dish. |
3. | In a separate bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then stir in vanilla extract. |
4. | Pour cream cheese mixture over the crust and spread evenly. Top with fresh blueberries and sliced strawberries. |
5. | Bake in the preheated oven for 45 minutes or until the center is almost set. |
6. | Allow to cool, then refrigerate for at least 1 hour before cutting into bars. Enjoy! |
