Ingredients

1 lb ground pork
1 cup sliced mushrooms
1/2 cup diced onion
2 cloves garlic, minced
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
4 eggs
2 green onions, sliced
Fresh parsley, chopped

Instructions

1.In a large skillet, cook the ground pork over medium heat until browned and cooked through.
2.Remove the pork from the skillet and set aside.
3.In the same skillet, add the sliced mushrooms, diced onion, and minced garlic.
4.Cook until the mushrooms are tender and the onions are translucent.
5.Add the cooked pork back to the skillet and stir to combine.
6.Season with dried thyme, salt, and black pepper.
7.Create 4 small wells in the pork mixture and crack an egg into each well.
8.Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
9.Remove from heat and garnish with sliced green onions and chopped fresh parsley.
10.Serve hot and enjoy!
