A hearty and flavorful breakfast skillet made with pork and mushrooms.
1 lb ground pork | |
1 cup sliced mushrooms | |
1/2 cup diced onion | |
2 cloves garlic, minced | |
1 tsp dried thyme | |
1/2 tsp salt | |
1/4 tsp black pepper | |
4 eggs | |
2 green onions, sliced | |
Fresh parsley, chopped |
1. | In a large skillet, cook the ground pork over medium heat until browned and cooked through. |
2. | Remove the pork from the skillet and set aside. |
3. | In the same skillet, add the sliced mushrooms, diced onion, and minced garlic. |
4. | Cook until the mushrooms are tender and the onions are translucent. |
5. | Add the cooked pork back to the skillet and stir to combine. |
6. | Season with dried thyme, salt, and black pepper. |
7. | Create 4 small wells in the pork mixture and crack an egg into each well. |
8. | Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking. |
9. | Remove from heat and garnish with sliced green onions and chopped fresh parsley. |
10. | Serve hot and enjoy! |
