
Fresh and flavorful vegan tacos filled with pineapple salsa and guacamole.
Ingredients
- 8 Tortillas corn or flour
- 2 cups Pineapple diced
- 1 cup diced tomatoes
- 1/2 cup red onion diced
- 1/4 cup cilantro chopped
- 1 jalapeño seeded and diced
- 2 avocados
- 1/4 cup red onion diced
- 2 tbsp lime juice
- salt to taste
Instructions
- In a medium bowl, combine diced pineapple, tomatoes, red onion, cilantro, and jalapeno. Mix well and set aside.
- In another bowl, mash avocados with a fork. Stir in diced red onion, lime juice, and salt.
- Warm tortillas in a dry skillet or over a flame until pliable.
- Spread a spoonful of guacamole onto each tortilla, then top with pineapple salsa.
- Fold tortillas in half and serve immediately.

Yum! Just made it for a friends gathering and they all loved it! Will make again.
Not sure about mixing pineapple with guacamole. Seems odd to me. I might stick to traditional salsa.
