- 12 oz spaghetti Use your favorite type, such as whole wheat or gluten-free
- 2 tablespoons olive oil Extra virgin is preferred
- 3 cloves garlic Minced
- 5 cups kale Chopped
- 4 cups vegetable broth Low-sodium recommended
- 1 teaspoon red pepper flakes Optional, for heat
- 1 cup parmesan cheese Grated
