400g fresh mushrooms | |
1 onion, chopped | |
2 garlic cloves, minced | |
2 cups vegetable broth | |
1 cup heavy cream | |
1 tablespoon olive oil | |
Salt and pepper, to taste | |
Fresh parsley, for garnish |
1. | In a large pot, heat the olive oil over medium heat. |
2. | Add the onion and garlic to the pot and sauté until softened. |
3. | Add the mushrooms to the pot and cook until browned. |
4. | Pour in the vegetable broth and bring to a boil. |
5. | Reduce the heat and simmer for 20 minutes. |
6. | Using an immersion blender or regular blender, puree the soup until smooth. |
