Ingredients

4 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon ground turmeric
Salt and pepper to taste
1 cup hummus
1 cucumber, diced
1 pint cherry tomatoes, halved
1/2 red onion, thinly sliced
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint

Instructions

1.Preheat grill to medium-high heat.
2.In a small bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and pepper. Rub the spice mixture all over the chicken breasts.
3.Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Remove from grill and let rest for a few minutes.
4.Slice the grilled chicken into strips.
5.To assemble the bowls, divide the hummus among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, red onion, parsley, and mint.
6.Serve immediately and enjoy!
