A delicious Middle Eastern-inspired bowl with grilled chicken, hummus, and flavorful toppings.
4 boneless, skinless chicken breasts | |
2 tablespoons olive oil | |
1 teaspoon ground cumin | |
1 teaspoon ground coriander | |
1 teaspoon paprika | |
1/2 teaspoon ground turmeric | |
Salt and pepper to taste | |
1 cup hummus | |
1 cucumber, diced | |
1 pint cherry tomatoes, halved | |
1/2 red onion, thinly sliced | |
1/4 cup chopped fresh parsley | |
1/4 cup chopped fresh mint |
1. | Preheat grill to medium-high heat. |
2. | In a small bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and pepper. Rub the spice mixture all over the chicken breasts. |
3. | Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Remove from grill and let rest for a few minutes. |
4. | Slice the grilled chicken into strips. |
5. | To assemble the bowls, divide the hummus among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, red onion, parsley, and mint. |
