Middle Eastern Grilled Chicken and Hummus Bowl
A delicious Middle Eastern-inspired bowl with grilled chicken, hummus, and flavorful toppings.
Ingredients
- 4 chicken breasts boneless, skinless
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp turmeric ground
- Salt and pepper to taste
- 1 cup hummus
- 1 cucumber diced
- 1 pint cherry tomatoes halved
- 1/2 red onion thinly sliced
- 1/4 cup parsley chopped fresh
- 1/4 cup mint chopped fresh
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, combine olive oil, cumin, coriander, paprika, turmeric, salt, and pepper. Rub the spice mixture all over the chicken breasts.
- Grill the chicken for 6-8 minutes per side, or until cooked through and juices run clear. Remove from grill and let rest for a few minutes.
- Slice the grilled chicken into strips.
- To assemble the bowls, divide the hummus among four bowls. Top with grilled chicken, cucumber, cherry tomatoes, red onion, parsley, and mint.
- Serve immediately and enjoy!
