A hearty and nutritious lentil soup packed with vegetables and flavors, perfect for a cozy meal.
Ingredients
- 1 cup lentils rinsed and drained
- 2 tablespoons olive oil
- 1 cup carrots chopped
- 1 cup celery chopped
- 1 cup onion chopped
- 2 cloves garlic minced
- 6 cups vegetable broth or chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon salt to taste
- 1/2 teaspoon black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onions, carrots, and celery, and sauté until the onions are translucent, about 5-7 minutes.
- Stir in garlic, cumin, and coriander, and cook for another minute until fragrant.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the lentils are tender.
- Season with salt and black pepper to taste before serving.
