A delicious and flavorful roast chicken recipe with lemon and herbs.
1 whole chicken (about 4 pounds) | |
2 lemons, sliced | |
4 cloves garlic, minced | |
2 tablespoons fresh rosemary, chopped | |
2 tablespoons fresh thyme, chopped | |
2 tablespoons olive oil | |
Salt and pepper to taste |
1. | Preheat the oven to 425°F (220°C). |
2. | Rinse the chicken and pat it dry with paper towels. |
3. | In a small bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, salt, and pepper. |
4. | Rub the mixture all over the chicken, including under the skin. |
5. | Place the sliced lemons inside the chicken cavity. |
6. | Transfer the chicken to a roasting pan and roast in the preheated oven for 1 hour, or until the internal temperature reaches 165°F (74°C). |
7. | Remove the chicken from the oven and let it rest for 10-15 minutes before carving. |
8. | Serve the lemon herb roast chicken with your favorite side dishes. |
