A hearty and flavorful lamb stew that’s perfect for a cozy dinner.
Ingredients
- 500 grams lamb shoulder cut into cubes
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 large onion chopped
- 2 cups beef broth
- 1 cup carrots sliced
- 1 cup potatoes diced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt or to taste
- 1/2 teaspoon black pepper or to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the lamb pieces and brown on all sides.
- Remove the lamb from the pot and set aside. Add the garlic and onion to the pot and sauté for about 5 minutes, until softened.
- Return the lamb to the pot. Stir in the carrots, potatoes, tomato paste, thyme, salt, and black pepper. Pour in the beef broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for about 2 hours, or until the lamb is tender and the vegetables are cooked through.
- Taste and adjust seasoning with more salt and pepper if needed. Serve hot.

Looks good, but I don’t trust lamb. Isn’t it too tough? I might stick to beef.
I dunno, didn’t taste good to me. It was too salty! I think I put too much of the salt. Not making it again.

I wasn’t sure about using beef broth instead of lamb broth. It turned out okay but felt a bit off. Next time I’ll try it with lamb broth.
