2 ripe avocados | |
1/2 cup unsweetened cocoa powder | |
1/2 cup almond flour | |
1/4 cup erythritol | |
2 eggs | |
1 teaspoon vanilla extract | |
1/2 teaspoon baking powder | |
1/4 teaspoon salt |
1. | Preheat the oven to 350°F (175°C). Grease an 8x8 inch baking dish. |
2. | Cut the avocados in half, remove the pits, and scoop out the flesh into a bowl. |
3. | Use a fork to mash the avocados until smooth. |
4. | Add the cocoa powder, almond flour, erythritol, eggs, vanilla extract, baking powder, and salt to the bowl with the mashed avocados. Mix well until the batter is smooth and combined. |
5. | Pour the batter into the prepared baking dish and smooth the top with a spatula. |
6. | Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. |
7. | Remove from the oven and let cool in the baking dish for 10 minutes, then transfer to a wire rack to cool completely. |
8. | Cut into 12 squares and serve. |
