Ingredients
  

  • 1 cup long grain rice
  • 1 tbsp olive oil
  • 1 onion medium, diced
  • 1 green bell pepper medium, diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth
  • 1/2 lb shrimp peeled and deveined
  • 1 tbsp Creole seasoning
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 2 stalks Green onions for garnish, sliced
  • 1/4 cup parsley for garnish, chopped

Instructions
 

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion, green bell pepper, and garlic. Cook until the vegetables are soft, about 5 minutes.
  • Stir in the diced tomatoes and chicken broth. Bring to a boil.
  • Add the rice and stir well. Reduce the heat to low and cover the pot.
  • Let the mixture simmer for about 15 minutes, stirring occasionally.
  • Stir in the cooked chicken, andouille sausage, shrimp, Creole seasoning, salt, and black pepper. Cover and cook until the rice is tender and the shrimp are pink, about 10 minutes.
  • Remove from heat and let the jambalaya sit for 5 minutes.
  • Garnish with green onions and parsley before serving.

    Ain’t jambalaya supposed to have more meat? I threw in some sausage but I still felt it was lacking. Maybe I’ll try again with more stuff.

      I dunno, more meat might make it too heavy. I kinda like the veggie and shrimp balance. But yeah, to each their own.

      Yeah, I agree! Jambalaya can be more hearty with extra meats like sausage or chicken. Maybe try adding some andouille or even crab next time! Yum!

    Tasted good, but I think it needed more spice. I used 2 tbsp of the Creole seasoning but it was still kinda bland.
