Italian Chicken Sheet Pan Supper

August 7, 2024

Italian Chicken Sheet Pan Supper is one of those meals that makes life easier without sacrificing flavor. With just one pan, you get a full dinner that is colorful, balanced, and satisfying. It is the kind of recipe that feels comforting and fresh at the same time, making it perfect for busy nights or when you just want something warm and hearty without a big mess in the kitchen.

The beauty of this dish is its simplicity. Start with seasoned chicken, coated in olive oil, garlic, and classic Italian herbs like oregano, thyme, and basil. Then surround the chicken with a mix of vegetables such as bell peppers, zucchini, cherry tomatoes, and red onions. Everything goes onto a sheet pan and into the oven, where the flavors come together as it roasts.

While it cooks, the vegetables soften and caramelize slightly, soaking up the juices from the chicken and herbs. The chicken turns golden on the outside and stays juicy on the inside. The tomatoes burst and create a light, flavorful sauce that coats everything on the tray. It is the kind of meal that looks as good as it tastes, full of color and bold aroma.

This sheet pan supper is easy to adapt. You can add baby potatoes, broccoli, or even mushrooms. If you like a little heat, sprinkle in some crushed red pepper flakes. Add a squeeze of lemon or a sprinkle of Parmesan before serving to brighten up the dish. You can serve it on its own, over rice, or with a slice of bread to soak up all the delicious juices.

Cleanup is minimal, and the whole meal comes together quickly. It is also great for leftovers, making it a smart choice for meal prep.

Italian Chicken Sheet Pan Supper proves that weeknight cooking can be both simple and full of flavor, using wholesome ingredients and just one pan.

Just okay. My family didn’t love it. I think they wanted more flavor or something. 😒

I guess you can say the recipe is pretty forgiving! But how did it not dry out without the oil? 🤔

Seems too easy to be good. I guess I’ll try, but I’m skeptical about the chicken getting cooked through.

Looks too simple if you ask me. Hope it works out for you, but don’t blame the recipe if the chicken is raw!

I was skeptical too, but it turned out amazing! Just make sure the chicken is at least 165°F and you’ll be good!

I dunno… the chicken came out kinda dry for me. I followed the recipe exactly. Maybe lower the time?
