An easy and delicious Italian-style chicken and vegetable dish cooked on a single sheet pan. Perfect for a hassle-free weeknight dinner!

Ingredients
  

  • 1 cup cherry tomatoes halved
  • 1 cup zucchini sliced into rounds
  • 1 cup Bell peppers sliced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Place the chicken breasts on a baking sheet.
  • Arrange the cherry tomatoes, zucchini, and bell peppers around the chicken.
  • Drizzle the olive oil over the chicken and vegetables.
  • Sprinkle the Italian seasoning, garlic powder, salt, and pepper over the entire sheet pan.
  • Toss the vegetables lightly to coat them in the seasoning and oil.
  • Bake in the preheated oven for 25 minutes or until the chicken is cooked through and the vegetables are tender.
  • Remove from the oven and let rest for a few minutes before serving.

    Seems too easy to be good. I guess I’ll try, but I’m skeptical about the chicken getting cooked through.

      Looks too simple if you ask me. Hope it works out for you, but don’t blame the recipe if the chicken is raw!

      I was skeptical too, but it turned out amazing! Just make sure the chicken is at least 165°F and you’ll be good!
