Ingredients
  

  • 8 ounces penne pasta
  • 1 cup mixed vegetables peas, corn), carrots

  • 2 cloves garlic minced
  • 1 tsp ginger minced
  • 1 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp red chili powder
  • 1/4 tsp garam masala
  • salt to taste
  • 2 tbsp vegetable oil
  • cilantro leaves for garnish

Instructions
 

  • Cook the penne pasta according to the package instructions. Drain and set aside.
  • In a large skillet, heat the vegetable oil over medium heat.
  • Add the finely chopped onion and sauté until translucent.
  • Stir in the minced garlic and ginger, and cook for about 30 seconds until fragrant.
  • Add the cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala. Mix well to coat the onions with the spices.
  • Add the mixed vegetables to the skillet and sauté for a few minutes until they start to soften.
  • Stir in the cooked penne pasta and toss to combine with the vegetable-spice mixture.
