Ingredients
- 1 package puff pastry sheets thawed
- 12 oz baby carrots washed and trimmed
- 2 tbsp unsalted butter melted
- 3 tbsp honey adjust sweetness to taste
- 1 tsp salt
- 1 tsp black pepper freshly ground
Instructions
- Preheat your oven to 400°F (200°C).
- In a saucepan, melt the butter over medium heat. Stir in the honey, salt, and pepper. Add the baby carrots and toss to coat evenly.
- Cook the carrots for about 10 minutes, or until they start to become tender, stirring occasionally.
- Roll out the thawed puff pastry and cut into squares large enough to wrap around the carrots.
- Place a few glazed carrots in the center of each pastry square and fold the corners over to enclose the carrots.
- Place the wrapped carrots on a baking sheet lined with parchment paper, seam side down.
- Bake for 12–15 minutes, or until the pastry is golden brown.
- Remove from oven and let cool slightly before serving.

These are absolutely divine! The combination of honey and butter makes everything better. I added a sprinkle of cinnamon for extra flavor, wow! Will definitely make again.
Quick and easy! But maybe let the puff pastry thaw longer ? Mine was a bit hard to work with at first. Tasted good tho!
