A refreshing and healthy salad with grilled shrimp and bok choy.
Ingredients
- 1 pound shrimp peeled and deveined
- 4 baby bok choy halved
- 1 red bell pepper sliced
- 1 cucumber sliced
- 1/2 cup cherry tomatoes halved
- 1/4 cup cilantro chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 2 cloves garlic minced
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- In a large bowl, combine shrimp, bok choy, red bell pepper, cucumber, cherry tomatoes, and cilantro.
- In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Pour the dressing over the salad and toss to coat.
- Grill the shrimp and bok choy for 2-3 minutes per side until shrimp is cooked through and bok choy is charred.
- Transfer the shrimp and bok choy to a serving platter and top with the salad mixture.
- Serve immediately and enjoy!
