A refreshing and healthy salad with grilled shrimp and bok choy.

Ingredients
  

  • 1 pound shrimp peeled and deveined
  • 4 baby bok choy halved
  • 1 red bell pepper sliced
  • 1 cucumber sliced
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup cilantro chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high heat.
  • In a large bowl, combine shrimp, bok choy, red bell pepper, cucumber, cherry tomatoes, and cilantro.
  • In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
  • Pour the dressing over the salad and toss to coat.
  • Grill the shrimp and bok choy for 2-3 minutes per side until shrimp is cooked through and bok choy is charred.
  • Transfer the shrimp and bok choy to a serving platter and top with the salad mixture.
  • Serve immediately and enjoy!

    I followed the recipe but ended up burning the shrimp. 😭 How do you keep them from drying out?

      Maybe try cooking them for less time? Shrimp cook really fast! Or you could marinate them to keep them juicy. Good luck!

      I just use a thermometer, shrimp are done at 120F! Otherwise it’s too easy to overcook. Hope that helps!

    I don’t know how you can eat that raw bok choy. It look so weird. I like it better boiled!

      I totally get that! Raw bok choy isn’t for everyone. But grilling it brings out such a nice flavor! Give it a try next time!
