Grilled Chicken and Sesame Cucumber Salad
A delicious and refreshing salad made with grilled chicken and sesame cucumber.
Ingredients
- chicken
- 4 chicken breast halves boneless, skinless
- 2 tbsp olive oil
- 2 cloves garlic minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- For the Salad:
- 2 cucumbers thinly sliced
- 1/4 cup rice vinegar
- 1 tbsp sesame oil
- 1 tbsp soy sauce
- 1 tbsp honey
- 2 tbsp sesame seeds
- 2 Green onions chopped
Instructions
- Preheat grill to medium-high heat.
- In a small bowl, whisk together olive oil, garlic, paprika, salt, and black pepper. Brush the mixture onto both sides of the chicken breast halves.
- Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from grill and let rest for 5 minutes.
- Meanwhile, in a large bowl, combine sliced cucumbers, rice vinegar, sesame oil, soy sauce, and honey. Toss to coat.
- Sprinkle sesame seeds and chopped green onions over the cucumber mixture and toss again.
- Slice the grilled chicken and serve atop the sesame cucumber salad.
