For the Chicken: | |
4 boneless, skinless chicken breast halves | |
2 tablespoons olive oil | |
2 cloves garlic, minced | |
1 teaspoon paprika | |
1/2 teaspoon salt | |
1/4 teaspoon black pepper | |
For the Salad: | |
2 cucumbers, thinly sliced | |
1/4 cup rice vinegar | |
1 tablespoon sesame oil | |
1 tablespoon soy sauce | |
1 tablespoon honey | |
2 tablespoons sesame seeds | |
2 green onions, chopped |
1. | Preheat grill to medium-high heat. |
2. | In a small bowl, whisk together olive oil, garlic, paprika, salt, and black pepper. Brush the mixture onto both sides of the chicken breast halves. |
3. | Grill the chicken for 6-8 minutes per side, or until cooked through. Remove from grill and let rest for 5 minutes. |
4. | Meanwhile, in a large bowl, combine sliced cucumbers, rice vinegar, sesame oil, soy sauce, and honey. Toss to coat. |
5. | Sprinkle sesame seeds and chopped green onions over the cucumber mixture and toss again. |
6. | Slice the grilled chicken and serve atop the sesame cucumber salad. |
