Fried Chicken and Bell Pepper Frittata

Ingredients

6 eggs
1/4 cup milk
1 cup cooked fried chicken, shredded
1/2 cup bell pepper, diced
1/4 cup onion, diced
1/4 cup shredded cheddar cheese
Salt and pepper to taste
1 tablespoon olive oil

Instructions

1.In a large bowl, whisk together the eggs, milk, salt, and pepper.
2.Heat olive oil in a non-stick skillet over medium heat.
3.Add the bell pepper and onion to the skillet and sauté until softened, about 5 minutes.
4.Add the shredded fried chicken to the skillet and cook for another 2 minutes.
5.Pour the egg mixture into the skillet and stir to distribute the ingredients evenly.
6.Cook the frittata for 10-15 minutes, until the edges are set but the center is still slightly jiggly.
7.Sprinkle the shredded cheddar cheese on top of the frittata and cover with a lid or aluminum foil.
8.Continue cooking for another 5 minutes, until the cheese is melted and the center of the frittata is set.
9.Remove from heat and let the frittata rest for a few minutes before serving.
10.Slice into wedges and serve hot.
