A delicious frittata made with fried chicken and bell peppers.
6 eggs | |
1/4 cup milk | |
1 cup cooked fried chicken, shredded | |
1/2 cup bell pepper, diced | |
1/4 cup onion, diced | |
1/4 cup shredded cheddar cheese | |
Salt and pepper to taste | |
1 tablespoon olive oil |
1. | In a large bowl, whisk together the eggs, milk, salt, and pepper. |
2. | Heat olive oil in a non-stick skillet over medium heat. |
3. | Add the bell pepper and onion to the skillet and sauté until softened, about 5 minutes. |
4. | Add the shredded fried chicken to the skillet and cook for another 2 minutes. |
5. | Pour the egg mixture into the skillet and stir to distribute the ingredients evenly. |
6. | Cook the frittata for 10-15 minutes, until the edges are set but the center is still slightly jiggly. |
7. | Sprinkle the shredded cheddar cheese on top of the frittata and cover with a lid or aluminum foil. |
8. | Continue cooking for another 5 minutes, until the cheese is melted and the center of the frittata is set. |
9. | Remove from heat and let the frittata rest for a few minutes before serving. |
10. | Slice into wedges and serve hot. |
