Ingredients
- 1 piece filet mignon about 6-8 oz, trimmed
- 1 tablespoon olive oil

- to taste black pepper
- 2 tablespoons unsalted butter softened
- 1 ounce blue cheese crumbled
- 1 teaspoon fresh parsley chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Season the filet mignon with salt and black pepper.
- Heat the olive oil in a skillet over medium-high heat.
- Sear the filet mignon for about 2-3 minutes on each side until browned.
- Transfer the skillet to the preheated oven and cook for 5-7 minutes for medium-rare.
- While the steak is in the oven, mix the softened butter, blue cheese, and parsley in a bowl.
- Remove the steak from the oven and let it rest for 5 minutes.
- Top the steak with the blue cheese butter before serving.

I don’t think blue cheese belongs on steak. Just ruined a perfectly good filet mignon. Stick with regular butter or something. Disappointed.
