A refreshing and healthy salad with cucumber and mint.
2 cucumbers | |
1/4 cup fresh mint leaves | |
2 tablespoons lemon juice | |
1 tablespoon extra virgin olive oil | |
Salt and pepper to taste |
1. | Peel and slice the cucumbers. |
2. | Chop the mint leaves. |
3. | In a bowl, combine the cucumbers, mint leaves, lemon juice, and olive oil. |
4. | Season with salt and pepper to taste. |
5. | Toss well to coat everything in the dressing. |
6. | Serve the salad chilled. |
