These Crispy Pea Fritters are a delicious and easy appetizer or snack. Packed with fresh peas and herbs, they’re crispy on the outside and soft on the inside.
Ingredients
- 1 cup fresh peas or frozen peas, thawed
- 1/2 cup all-purpose flour
- 1 large egg lightly beaten
- 1/4 cup milk
- 1/4 cup fresh herbs such as mint and parsley, chopped
- 1 teaspoon baking powder
- to taste salt
- to taste black pepper
- 2 tablespoons olive oil for frying
Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper.
- Whisk in the egg and milk until the batter is smooth.
- Fold in the peas and chopped herbs until evenly distributed.
- Heat olive oil in a non-stick skillet over medium-high heat.
- Spoon heaped tablespoons of batter into the pan, flattening slightly to make fritters.
- Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove fritters from the pan and drain on a paper towel-lined plate.
- Serve warm with a dollop of yogurt or sour cream, if desired.
