Ingredients
  

  • 12 ounces cheese tortellini fresh or refrigerated
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese grated
  • 2 cups spinach fresh
  • 1 cup cherry tomatoes halved
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Instructions
 

  • Cook the tortellini according to package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the heavy cream and bring to a simmer. Add parmesan cheese, stirring constantly until melted and the sauce is smooth.
  • Stir in the fresh spinach and halved cherry tomatoes. Cook until the spinach is wilted and the tomatoes are softened, about 2-3 minutes.
  • Add the cooked tortellini to the skillet and gently toss to coat in the creamy sauce.
  • Season with Italian seasoning, salt, and pepper to taste. Serve immediately and enjoy!
