
A refreshing and creamy soup made with avocado and cucumber.
Ingredients
- 2 avocados large,
- 1 cucumber
- 1 clove garlic
- 1/2 cup plain Greek yogurt
- 1/4 cup cilantro fresh
- 2 tbsp lime juice
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 cup vegetable broth
Instructions
- Cut the avocados in half, remove the pit, and scoop out the flesh into a blender.
- Peel and chop the cucumber, and add it to the blender.
- Add the garlic clove, Greek yogurt, cilantro, lime juice, salt, black pepper, cayenne pepper, and vegetable broth to the blender.
- Blend until smooth and creamy.
- Taste and adjust seasoning as needed.
- Serve chilled and garnish with extra cilantro and a squeeze of lime, if desired.

I made it without garlic because I can’t stand the taste. Still pretty good.
I didn’t have cilantro, so I used parsley. Still came out well, I think. More salty tho, lol.

Why use vegetable broth? Can’t you just use water? Seems kinda silly.
