Ingredients
  

  • 1 cup white rice rinsed
  • 1 cup corn kernels fresh or frozen
  • 2 tablespoons butter unsalted
  • 2 cups water
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • In a medium saucepan, melt the butter over medium heat.
  • Add the rinsed rice and stir to coat with butter. Cook for 2-3 minutes, stirring frequently.

  • Bring the mixture to a boil, then reduce heat to low and cover. Simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
  • Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork and serving.
