2 cups corn kernels | |
1 can (15 oz) black beans, drained and rinsed | |
1 red bell pepper, diced | |
1/2 red onion, finely chopped | |
1/4 cup fresh cilantro, chopped | |
1/4 cup olive oil | |
Juice of 2 limes | |
1 teaspoon cumin | |
Salt and pepper to taste |
1. | In a large bowl, combine the corn, black beans, red bell pepper, red onion, and cilantro. |
