Ingredients
  

  • 2 cups coconut milk
  • 1 cup mango puree fresh or canned
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut optional

Instructions
 

  • In a large mixing bowl, combine the coconut milk, mango puree, sugar, and vanilla extract. Stir until the sugar is fully dissolved.
  • Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  • If not using an ice cream maker, pour the mixture into a shallow dish and freeze. Stir the mixture every 30 minutes until it reaches a creamy consistency, about 4 hours.
  • If desired, fold in the shredded coconut before the ice cream sets completely.
  • Serve and enjoy!
