Delicious and fluffy American pancakes that are perfect for breakfast or brunch.
1 cup all-purpose flour | |
2 tablespoons granulated sugar | |
1 teaspoon baking powder | |
1/2 teaspoon baking soda | |
1/4 teaspoon salt | |
3/4 cup buttermilk | |
1/4 cup milk | |
1 large egg | |
2 tablespoons unsalted butter, melted | |
1 teaspoon vanilla extract | |
Butter or oil for cooking | |
Maple syrup for serving |
1. | In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. |
2. | In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract. |
3. | Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; it's okay if there are a few lumps. |
4. | Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface. |
5. | Using a 1/4 cup measuring cup, pour the batter onto the skillet or griddle. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown. |
6. | Repeat with the remaining batter, adding more butter or oil as needed. |
7. | Serve the pancakes warm with maple syrup. |
