Ingredients
  

  • 2 cups chicken breast cubed
  • 1 head cauliflower cut into florets
  • 1 cup chicken broth low sodium
  • 1 cup Cheddar Cheese shredded
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • to taste salt
  • to taste black pepper freshly ground

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large baking dish, combine cubed chicken breast and cauliflower florets.
  • Drizzle olive oil over the chicken and cauliflower, and then sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  • Pour chicken broth over the mixture and cover the dish with aluminum foil.
  • Bake for 30 minutes, then remove the foil and sprinkle shredded cheddar cheese on top.
  • Bake uncovered for an additional 15 minutes, or until the chicken is cooked through and the cauliflower is tender.
  • Remove from the oven and let it cool for a few minutes before serving.
