Ingredients

2 large chicken breasts, cooked and diced
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 small onion, thinly sliced
4 large tortillas
1 cup shredded cheddar cheese
Salt and pepper to taste
1 tablespoon olive oil

Instructions

1.In a large skillet, heat the olive oil over medium heat.
2.Add the sliced bell peppers and onion to the skillet and cook until softened.
3.Add the diced chicken to the skillet and season with salt and pepper. Cook for an additional 5 minutes.
4.Warm the tortillas in a separate skillet or in the microwave.
5.Divide the chicken and bell pepper mixture evenly among the tortillas, then top with shredded cheddar cheese.
6.Roll up the tortillas and serve warm.
