Ingredients

6 large eggs
1/4 cup milk
Salt and pepper to taste
1 tablespoon olive oil
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup cooked and crumbled breakfast sausage
1/2 cup shredded cheddar cheese
6 large flour tortillas
Salsa and sour cream for serving

Instructions

1.In a bowl, whisk together eggs, milk, salt, and pepper.
2.Heat olive oil in a skillet over medium heat.
3.Add onions and bell peppers, cooking until softened.
4.Push vegetables to the side of the skillet and pour in the egg mixture.
5.Scramble the eggs until just set, then stir in the cooked sausage and cheese.
6.Warm the tortillas in a separate skillet or microwave.
7.Divide the egg mixture among the tortillas, fold in the sides, and roll up.
8.Serve with salsa and sour cream.
