Black lentil and vegetable stew is a nourishing, earthy dish that brings together the deep flavor of lentils with a colorful mix of vegetables. It’s filling without being heavy, rich in texture without relying on cream, and full of natural goodness. Whether you’re looking for a cozy plant-based dinner or a meal prep staple that gets better with time, this stew checks all the boxes.
Black lentils, also known as beluga lentils, are small, shiny, and hold their shape beautifully during cooking. They have a slightly nutty flavor and a firm texture that makes them ideal for stews. Unlike red lentils, which tend to break down into a softer consistency, black lentils remain intact and provide a satisfying bite in every spoonful.
This stew typically starts with a base of onions, garlic, and carrots sautéed in olive oil. Add in celery, sweet potatoes, zucchini, or any vegetables you have on hand, and let them simmer gently with the lentils. A good vegetable broth brings everything together, while herbs like thyme, rosemary, or bay leaf add depth and fragrance. A touch of tomato paste or crushed tomatoes adds richness and rounds out the flavor.
What makes this dish especially appealing is its balance. The lentils offer protein and fiber, while the vegetables bring essential vitamins, minerals, and color. It’s a one-pot meal that feels both wholesome and satisfying, perfect for chilly evenings or packed lunches. You can serve it with crusty bread, over rice, or with a spoonful of yogurt or pesto for added flavor.
This stew is also flexible. You can spice it up with cumin, coriander, or smoked paprika, or keep it simple and herbaceous. It stores well in the fridge and even tastes better the next day as the flavors deepen and blend together.
Black lentil and vegetable stew is more than just a healthy choice. It’s a cozy, deeply flavorful meal that proves how satisfying plant-based cooking can be.

I don’t like lentils at all. Made this for my friends and they loved it though 😅
PERFECT! I’ve made it twice already. So filling and healthy, love the colors!
Cumin in the ingredients?! That aint right! Cumin is like too strong. I used less and it still was overpowering for me.
This stew is amazing! So flavorful and filling. I added some extra veggies and it turned out great! Will make again for sure!
Honestly, I found it too bland. Maybe I’m just used to more spices? Not sure if I’ll try this again.
This recipe is great, although I don’t trust black lentils, they should be green!!
Yum! Simple ingredients and easy to make. Perfect for chilly days! Will make again.
I totally agree! This stew sounds comforting and hearty. Perfect way to warm up!
Looks good, but I ain’t never cooked lentils before. Is it really that easy? 🤔
Great recipe! So easy to make and full of flavor. My kids loved it too, which is hard to come by!
Only 1 cup of lentils?? What’s up with that? I would use more next time.
I think 1 cup is enough! The lentils expand during cooking. More might make it too thick.
I don’t like lentils, but my partner loved this! Too many veggies for my taste.
Veggies are the best part! More colors mean more nutrients. But I guess it’s all about personal taste.
I get why you might not like lentils, but have you tried seasoning them differently? They can be really good with more spices!
Yummy stew! But I used chickpeas instead of lentils by accident! Still tasted good tho.
Chickpeas are a great substitute! Glad it still turned out yum! 😊
I don’t know what I did wrong but mine turned out kinda bland. Maybe I need to add more salt or something?
You might wanna try adding some herbs or spices too! A pinch of chili flakes can give it a nice kick. 😊
Eh, it was okay. I was hoping for more kick. Adding hot sauce next time!
It was okay, but it felt a little bland. I added some hot sauce to spice it up. Maybe more spices next time?
What can I say? Lentil stew… I don’t know why people like it. Just doesn’t click for me. 1 star.
I think it just takes some getting used to! Lentils are super healthy, but everyone’s taste is different. Maybe try adding more spices next time?
1 star?? C’mon, lentil stew is awesome. It’s like a warm hug in a bowl! Have you even tried making it yourself? Maybe you just had a bad version?
Yum! I love lentils, but the cooking times seemed off. My lentils were still crunchy after 30 mins. Next time I’ll cook them longer!
I think the cooking time can really depend on the type of lentils you use, some need more time. Maybe try soaking them next time? 🤔
This stew is delicious! I added some extra spices and it turned out amazing. Will definitely make again!
IDK, this was kinda weird. My kids didn’t like it at all, they said it looked like swamp.
Absolutely delicious! My husband ate 3 bowls! Loves it! A win for our family dinner.
Not for me, didn’t enjoy the flavor. But my uncle said it was good.
So easy to make! I appreciated the simplicity, though I wish I had cilantro, it really does make a difference. Also great for meal prep!
Why do people eat lentils? If it don’t have meat, I don’t want it. But it look healthy.
This stew is amazing! So hearty and full of flavor. I added some jalapenos for a kick!
Super easy and healthy! Swapped in kale for spinach and it was just as good. Try it out folks!
