Delicious beef and zucchini kabobs marinated with herbs and grilled to perfection.
1 lb beef sirloin, cut into 1-inch cubes | |
2 zucchini, sliced | |
1 red bell pepper, cut into chunks | |
1 yellow bell pepper, cut into chunks | |
1 onion, cut into chunks | |
2 tablespoons olive oil | |
2 cloves garlic, minced | |
1 tablespoon fresh rosemary, chopped | |
1 tablespoon fresh thyme, chopped | |
Salt and pepper, to taste |
1. | In a bowl, combine the olive oil, garlic, rosemary, thyme, salt, and pepper. Mix well. |
2. | Add the beef cubes to the marinade and toss to coat. Let marinate for at least 15 minutes. |
3. | Preheat grill to medium heat. |
4. | Thread the marinated beef, zucchini, bell peppers, and onion onto skewers. |
5. | Grill the kabobs for about 10 minutes, turning occasionally, until the beef is cooked to your desired level of doneness. |
6. | Serve the kabobs hot and enjoy! |
