Ingredients

2 ripe bananas
1/4 cup chia seeds
1 cup almond milk
1 tablespoon honey or maple syrup
1/2 teaspoon vanilla extract
Optional toppings: sliced bananas, shredded coconut, chopped nuts

Instructions

1.In a blender, combine the ripe bananas, almond milk, honey or maple syrup, and vanilla extract. Blend until smooth.
2.Pour the banana mixture into a bowl and add the chia seeds. Stir well to combine.
3.Cover the pudding and refrigerate for at least 2 hours, or overnight, until it thickens.
4.Once thickened, give the pudding a stir and divide it into serving bowls.
5.Top with sliced bananas, shredded coconut, and chopped nuts, if desired.
6.Serve chilled and enjoy!
