Ingredients
- 200 grams feta cheese block of feta
- 500 grams cherry tomatoes use fresh, ripe tomatoes
- 3 tablespoons olive oil high quality for better flavor
- 350 grams pasta such as penne or farfalle
- 3 cloves garlic minced
- 1 teaspoon red pepper flakes optional, for a bit of heat
- to taste salt and pepper season as needed
- 1/4 cup basil leaves chopped, for garnish
Instructions
- Preheat the oven to 200°C (400°F).
- Place the block of feta in the center of a baking dish and surround it with cherry tomatoes.
- Drizzle olive oil over the feta and tomatoes, and sprinkle with minced garlic, red pepper flakes, salt, and pepper.
- Bake for 25-30 minutes until the tomatoes burst and the feta is soft and golden.
- Meanwhile, cook the pasta according to the package instructions until al dente. Reserve some pasta water before draining.
- Remove the baking dish from the oven. Mix the feta and tomatoes together until creamy.
- Add the cooked pasta to the baked feta mixture, tossing to coat. Use reserved pasta water to adjust the consistency as needed.
- Garnish with chopped basil leaves and serve immediately.
